everyones a critic

Its true.  In this age of social media, absolutely anyone can critique your shop, your hotel,  your car dealership  and of course in my case my restaurant.  In one way its fantastic, instantaneous  response to what you offer.  A server is slow, you hear about...drinks weak you get it.  the kitchen screws up you know.  Fantastic right.  Even if you'd rather not know, go to sleep with the blessed ignorance of a job well done, you get to hear it...all of it.  But you know the other side is, the uniformed or mis- informed.  The guy that says all your dressing come from a bottle when they are all made in house, by you.  The lady who says your number 1 sauce on your best selling appetizer is bitter...when you sold 20 of them that night to rave reviews.  I had couple who once said I went too heavy on the mint sauce on my lamb chops...the lamb came with a zinfandel reduction that had absolutely... no mint.  It is a place where the customer gets an unsubstantiated public forum to affect what you love.  No amount of positive reviews seems to carry the merit of one awful tirade by a customer.  I have had them rant about menu eliminations...boneless chicken wings...awful fish tacos...even a open revolt to the elimination of a tuna melt.  I have a phobia about hot mayonnaise...its just me.  I am a senior reviewer on trip advisor, traveling the world...hopefully informing fellow vagabonds about places to sleep...catch a meal...find a precious cocktail.  I take the role seriously.  My tenant is tell people about the good...the great, and leave the awful to themselves.  Miller from the New York  Times  said he hoped upon hope to write good things about every restaurant he reviewed.  He ate out 450 times a year.  I am always hopeful that I can bring my effort and zeal to the table... I hope my brigade performs  flawlessly, my severs are fast and efficient.  And when I fail, I take it to heart.  But when a diner is full of fuckin shit and takes the time to take my place to task for whatever axe is being ground...I wanna go out in the dining room and show them my philly..nuf said
